There’s nothing worse than sourdough pancakes that look beautiful but turn dense or gummy in the middle. After years of trial and error, I finally wrote down the exact method I use every weekend so my family gets fluffy, golden pancakes every time — without wasting a drop of starter.


Why Sourdough Discard Pancakes Go Wrong

Most recipes mix sourdough starter like regular flour batter — but starter is already fermented. That means it behaves differently and needs:

  • Less mixing

  • A short rest

  • Gentle heat

Once you understand that, the texture completely changes.


Ingredients

  • 1 cup sourdough discard (room temperature)

  • 1 cup milk

  • 1 egg

  • 2 tablespoons melted butter

  • 1 tablespoon sugar

  • 1 teaspoon vanilla

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1¼ cups all-purpose flour


Why These Pancakes Work

  • Using discard at room temperature prevents dense centers

  • Letting the batter rest 5 minutes hydrates the flour

  • Cooking low-medium keeps the inside fluffy while edges crisp



The Exact Method I Use

Step 1 – Mix Wet

Whisk discard, milk, egg, butter, sugar, and vanilla until just combined.

Step 2 – Add Dry

Sprinkle baking soda, baking powder, salt, and flour over the bowl. Fold gently — stop when streaks disappear.


Step 3 – Rest (this is the secret)

Let the batter sit for 8–10 minutes. This allows the discard to relax so pancakes stay fluffy.


Step 4 – Cook Low & Slow

Heat pan on medium-low. Pour batter, cook until bubbles form, flip once, cook gently until golden.


What Makes Them Fluffy (Not Gummy)

  • Never over-mix

  • Always let the batter rest

  • Don’t rush the heat

  • Flip only once

This isn’t just cooking — it’s letting fermentation work for you.


If Your Pancakes Are Gummy…

  • Batter was too thick → add 1 tbsp milk

  • Pan too hot → lower heat

  • Didn’t rest the batter → wait 5 minutes before cooking


Make Them Special

Try adding:

  • Blueberries

  • Cinnamon sugar swirl

  • Chocolate chips

  • Lemon zest + powdered sugar

  • Brown butter drizzle


How to Store & Freeze

  • Fridge: 3 days in airtight container

  • Freezer: freeze flat, reheat in toaster
